Eryngium bourgatii, commonly known as Mediterranean Sea Holly, is a striking herbaceous perennial prized for its spiny, deeply lobed, silver-veined leaves and vivid blue thistle-like flower heads. Flowering in mid to late summer, it adds bold architectural interest and vibrant colour to sunny borders, gravel gardens, and wildlife-friendly planting schemes. The plant’s sculptural form and metallic tones contrast beautifully with softer blooms, and it's particularly attractive to bees and butterflies. It’s also an excellent choice for cut and dried flower arrangements.
